Delicate shortcrust pastry filled with Apple.
- Butter – 250 gr.
- Sour cream – 900 g.
- Wheat flour – 450 gr.
- Baking powder – 1,5 tsp
- Salt – to taste
- Water – 100 ml.
- Apples – 1.3 kg.
- Sugar – 325 WP.
- Lemon zest and 1.5 tsp.
- Semolina – 2-3 tbsp
- Walnuts – to taste
- Peel the apples, remove the core. Cut the fruit into small pieces. Pour into the pan. Add 100 ml of water, 3 tbsp. sugar. Cook until the apples are soft. Add semolina, the mass was thick. Boil for a minute. Add the lemon zest. Set aside to cool.
- Mix the flour, salt, chilled butter, baking powder. Grind everything into crumbs. Add 200 g sour cream 20% fat. Mix. Gather dough into a ball. Wrap with cling film and leave in the fridge for 60 minutes.
- Divide the dough into 15 equal parts. Roll a piece into the reservoir 40 x 10 cm, Spread the stuffing along the edge of the layer of roll tube and fasten the edges. Repeat this with each part of the test.
- Cover a baking sheet baking paper, put on top of the tube, send the tube in a preheated 180 °C oven. Bake until bottom and edges are browned. Cool.
- Mix 700 g of sour cream fat content of 25 % with 250 g sugar and vanilla sugar. Beat until the sugar is dissolved.
- Assemble the cake: place on a flat plate, five tubes, brush with cream, then 4 rolls and cream, 3 tubes of cream, 1 tube and cream. Smear cream all the cake again. Send in the refrigerator for at least 4 hours.
- Cut the sides to make the cake look spectacular. Garnish with chopped nuts.
